I have a confession, when life gets busy I tend to eat the same thing for breakfast, every day. I’ve seen this in some of my coaching clients too – when we’re busy, we tend to stick to recipes that we enjoy and are used to making. However, when our diets lack variety we aren’t nourishing our bodies optimally.

Lately, I’ve been experimenting with my morning recipes and have been loving smoothie bowls – there is something so satisfying about eating a smoothie, versus drinking it. For my morning meal, its important that I have options that are quick to make and are high in protein, fat + fiber. The combination of protein, fat + fiber is key to stabilizing your blood sugar and keeping you satiated all morning.

ACAI SMOOTHIE BOWL (PLANT BASED + GLUTEN FREE) 

Serves 1.

INGREDIENTS

  • 1 single package frozen acai berry, unsweetened
  • 1/2 – 1 frozen banana (extra ripe)
  • Handful of spinach
  • 1/2 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • 1 tablespoon flaxseed
  • 1/2 cup full-fat coconut milk
  • 6 tablespoons filtered water
  • 1/2 teaspoon cinnamon
  • Ice as needed, to thicken

INSTRUCTIONS

  1. First, soak the chia seeds in 6 tablespoons water for at least 20 minutes. This step is critical to receive the most health benefits from the chia seeds and essential to achieving a thick consistency.
  2. Combine all remaining ingredients in a high-speed blender and mix thoroughly. If needed, add ice to thicken. Note: if your blender doesn’t always liquify your greens, blend your greens with liquid first (before adding the remaining ingredients). This should make your smoothies and smoothie bowls less ‘chunky’. 
  3. Top with your favourite nutritious ingredients and enjoy!

Add variety to your smoothie bowl with toppings! Here are some of my favourites:

  • Raw, unsweetened cacao nibs
  • Shredded, unsweetened coconut
  • Raw nuts + seeds (hemp seeds, pumpkin seeds, almonds, walnuts, cashews, etc.)
  • Bee pollen
  • Fresh banana slices
  • Fresh berries
  • Homemade granola
